Oven Caramel Popcorn

A friend has asked for a caramel popcorn recipe, and I didn't have one. My adoptive sister has one and she's a great gal. So just go to Bristow Bistro for it and look at all of her other great recipes. Enjoy!

Pepperoncini Beef Subs

1 (3 pound) beef chuck roast, frozen*
4 cloves garlic, minced

1 (16 ounce) jar pepperoncini

1 green pepper, sliced
1 onion, sliced
1 tbs oil
Swiss Cheese
Buns
  • Place roast and garlic in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.
  • Cover, and cook on Low for 6 to 8 hours. The meat should fall apart easily.
  • Saute green peppers and onions in oil. 
  • Serve roast, peppers, onions and cheese on sub buns.
* The meat wont dry out.

Caramel Sauce

1 cup   Light Cream

1 cup   Brown Sugar, packed

1 cup   Corn Syrup, light or dark

1/3 cup Butter or margarine

1 tsp. Vanilla

1/8 tsp. Salt

  • Measure all ingredients into saucepan.
  • Heat and stir over medium heat until mixture boils.
  • Boil and stir for 2 minutes. 
  • Cool

Makes about 2 1/2 cups.

Italian Sausage Soup

1 lb Italian sausage*
1 clove garlic, minced
2 cans beef broth
1 (14.5 oz) can strewed tomatoes
1 cup carrots, sliced
1 can kidney beans
1/2 package of frozen spinach
black pepper & salt
  • In stockpot or dutch oven brown sausage and garlic. Stir in broth, tomatoes and carrots. Reduce heat and simmer for 15 minutes.
  • Add beans and spinach. Salt & pepper to taste. Cover and simmer for another 15 minutes.
*We tried it with hot Italian sausages and it was too hot for myself and the kids. Ben loved it. We've decided the next time we make it we're going to do half hot Italian sausage & half medium Italian sausage.

White Chocolate Chip Macadamia Nut Cookies

1 cup butter
1 1/2 cups granulated sugar
2 eggs
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
2 cups white chocolate chips
1 cup macadamia nuts, chopped
  • Preheat oven to 350 degrees F.
  • Cream butter and sugar together. 
  • Stir in vanilla and eggs.
  • Combine flour, baking soda and salt. 
  • Finally stir in white chocolate chips and nuts.
  • Drop on cookie sheet and bake for 8-10 minutes.
*I usually never let cookies cool because I LOVE freshly baked cookies, but these cookies are much better the next day.

Oatmeal Macadamia Nut Chocolate Cookies

1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
2 eggs
1 tsp. vanilla
1 1/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
2 cups rolled oats
1 cup semisweet chocolate chips
1 cup white chocolate or peanut butter chips
1 cup chopped macadamia nuts
  • Preheat oven to 350 degrees F. In a large bowl combine butter, sugars, baking powder, baking soda, and salt; beat until combined.
  • Beat in eggs and vanilla. Add flour and cocoa powder; beat on low speed until combined. stir in oats, semisweet chocolate chips, white chocolate chips (or peanut butter chips) and nuts.
  • Place on cookie sheets. Bake for 10-12 minutes. 

I'm going to make it.

A while ago I had a really good rocky road cookie from Co-op. I don't want to drive all the way up to Calgary just for these cookies. So I'm going to try to make my own. I haven't found a recipe yet for it. If you have a good rocky road cookie recipe please pass it my way.
